Yacuy Roasted is a mate created to be prepared both hot and cold-terere. By many yerba mate lovers it is infused with chocolate, cocoa, coconut milk, soy milk or almond milk and drunk as mate de leche. The bitterness typical of erva mate is significantly reduced in favour of a more spicy aftertaste.
The roasting of the leaves, apart from their dark colour, gives it a characteristic aftertaste and aroma reminiscent of chocolate or coffee beans. An infusion of mate tostada gives a brown colour.

An old way to cool down the body, originating in the tropical plantations of southern Brazil, is the so-called xima. In the evening an extract of 250 g of roasted yerba is prepared, boiled in water for 10 minutes, then the decoction is poured through a sieve into a glass container and left to cool in the fridge overnight. This extract is used to prepare a morning terere with mineral water, ice and lemons. Xima can be kept in the fridge for up to 7 days.
